When you come to the realization that the ready made soup you buy from the supermarket is nothing more than just over priced chopped tomatoes in an unenvironmentally friendly packing, try this. It tastes a million times better and it’s cheaper!
Start by cutting up half a kilo of tomatoes into quarters.
Add a sliced garlic clove, a good handful of fresh basil, salt, papper (or pepper if you prefer)
and olive oil.
Mix it all together on a tray and put it in the oven. 180c for 20 minutes.
While you wait, chop an onion, two cloves of garlic and some more basil and heat it in a pan together with olive oil, a pinch of sugar, some salt and more pepper.
Add 2 tins of copped tomatoes, 1 glass of water and some red wine if you like, let it simmer for about 15 minutes.
When your oven tomatoes are ready they will be all mushy and nice and the flavours will be really sweet! Mix it into the pan and let it cook for an other 5 minutes.
Get some white (preferably) dry bread and tear it into large chunks.
Put this in the bottom of a bowl and add the soup.
The whole bread thing might sound a little strange but trust me, It's really
the dot over the i, as we would say in Sweden.
